Ingredients

2 boneless, skinless chicken breasts

3 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

8 oz rotini pasta

Salt and pepper to taste

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Once cooked, drain and set aside.

Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

Sear the Chicken: In a large skillet over medium heat, melt 1 tablespoon of butter. Once melted and bubbling, add the seasoned chicken breasts. Cook for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

Make the Garlic Butter Sauce: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

Add Cream and Broth: Pour in the heavy cream and chicken broth. Stir well to combine, then let it simmer for 3-4 minutes until the sauce thickens slightly.

Add Parmesan: Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. Season with additional salt and pepper as needed.

Combine Pasta and Chicken: Slice the cooked chicken into strips and place it back into the skillet along with the drained rotini. Toss everything together in the creamy Parmesan sauce until well coated.

Serve: Garnish with freshly chopped parsley and an extra sprinkle of Parmesan cheese if desired. Serve hot and enjoy!
