Creamy Mushroom and Asparagus Chicken Penne

8 oz penne pasta

2 boneless, skinless chicken breasts, diced

1 cup asparagus, trimmed and cut into 1-inch pieces

8 oz cremini or button mushrooms, sliced

3 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken, season with salt, pepper, and thyme, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the onions and garlic, sautéing until the onions are translucent, about 3 minutes. Then, add the sliced mushrooms and asparagus. Cook for another 5-7 minutes until the mushrooms are tender and the asparagus is bright green.

        Make the Sauce: Reduce the heat to medium-low. Pour in the heavy cream, stirring to combine, and allow the mixture to simmer for 2-3 minutes. Gradually stir in the Parmesan cheese until melted and the sauce is creamy. Season with additional salt and pepper to taste.

          Combine Everything: Add the cooked chicken and penne pasta back into the skillet. Toss everything together until the pasta is coated in the creamy sauce. If the sauce is too thick, add a splash of pasta water to reach desired consistency.

            Serve: Remove from heat, garnish with fresh parsley, and serve warm. Enjoy the delightful combination of flavors!
