Crispy Bang Bang Chicken

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1 cup panko breadcrumbs

2 large eggs

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Vegetable oil for frying

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 tablespoon lime juice

1 teaspoon honey

Salt to taste

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken pieces with buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.

    Prepare the Coating: In one bowl, place the flour. In another bowl, beat the eggs until well combined. In a third bowl, add the panko breadcrumbs mixed with a pinch of salt and pepper.

      Coat the Chicken: Remove the chicken from the marinade. Dip each piece first into the flour, shaking off excess, then into the beaten egg, and finally into the panko breadcrumbs, ensuring they are well coated.

        Fry the Chicken: Heat about 2 inches of vegetable oil in a deep pan or skillet over medium-high heat. Once hot (around 350°F or 175°C), carefully add the coated chicken pieces in batches, frying until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

          Prepare the Bang Bang Sauce: In a mixing bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, lime juice, honey, and salt until smooth. Adjust the spice level according to your preference.

            Serve: Toss the crispy chicken pieces in the Bang Bang sauce until well-coated. Serve immediately, garnished with green onions or sesame seeds for extra flavor.
