Crispy Bang Bang Salmon Bites

Ingredients
  

1 pound fresh salmon fillet, skin removed

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Oil for frying (vegetable or canola)

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha sauce (adjust for heat preference)

Green onions and sesame seeds for garnish

Instructions
 

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes, approximately 1 inch in size. Pat the pieces dry with paper towels and season with salt and pepper.

    Set Up Bread Station: In three separate bowls, place the all-purpose flour (seasoned with salt and pepper), whisked eggs, and panko breadcrumbs mixed with garlic powder, onion powder, and smoked paprika.

      Bread the Salmon: Take each salmon cube, coat it first in the flour, shaking off any excess, then dip it into the egg mixture, and finally roll it in the panko breadcrumbs until fully coated. Repeat for all pieces.

        Heat the Oil: In a large skillet, heat about 1/2 inch of oil over medium-high heat until shimmering. Carefully test the oil by dropping in a piece of panko; it should sizzle immediately.

          Fry the Bites: Fry the salmon bites in batches, making sure not to overcrowd the pan. Cook for 2-3 minutes on each side, or until they are golden brown and crispy. Remove them and drain on a paper towel-lined plate.

            Prepare the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, and sriracha until smooth and creamy. Adjust the heat to your liking.

              Serve: Arrange the crispy salmon bites on a serving platter, drizzle or serve the Bang Bang sauce on the side, and garnish with chopped green onions and a sprinkle of sesame seeds.
