1 lb salmon fillet, skinless and boneless

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/2 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust for spiciness)

1 tsp lime juice

Chopped scallions and sesame seeds for garnish

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Salmon: Cut the salmon fillet into bite-sized cubes (about 1-inch thick) and season with salt, black pepper, garlic powder, and smoked paprika.

      Set Up the Breading Station: In one bowl, place the all-purpose flour. In a second bowl, beat the eggs until smooth. In a third bowl, add the panko breadcrumbs.

        Bread the Salmon Bites: One by one, dip each salmon cube into the flour, shaking off any excess. Next, dip it into the beaten eggs, letting the excess drip off, and finally coat it in the panko breadcrumbs. Ensure each piece is fully coated for maximum crispiness.
