1 lb fresh salmon fillets, skin removed

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

Salt and black pepper, to taste

1 tsp paprika

1 tsp garlic powder

1/2 cup mayonnaise

2-3 tbsp sweet chili sauce (adjust to taste)

1 tbsp sriracha (for extra heat, adjust to taste)

1 green onion, finely chopped (for garnish)

Oil for frying (vegetable or canola)

Instructions
 

Prepare the Salmon: Cut the salmon fillets into bite-size chunks (about 1-2 inches). Pat them dry with a paper towel and season with salt, black pepper, paprika, and garlic powder.

    Set Up Breading Stations: Place the flour in a shallow dish, the beaten eggs in another shallow dish, and the panko breadcrumbs in a third shallow dish.

      Bread the Salmon: Coat each salmon piece first in flour, shaking off excess, then dip in the beaten eggs, and finally roll in the panko breadcrumbs until well coated. Repeat for all pieces.

        Heat the Oil: In a large skillet, heat about 1/2 inch of oil over medium-high heat until it shimmers. You can test if it's ready by dropping in a piece of panko; it should sizzle immediately.

          Fry the Salmon Bites: Carefully place the breaded salmon chunks in the hot oil, making sure not to overcrowd the pan. Fry for 2-3 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

            Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, and sriracha. Mix until smooth. Adjust the heat and sweetness to taste.
