Ingredients

1 lb salmon fillet, skin removed and cut into bite-sized cubes

1/2 cup panko breadcrumbs

1/4 cup all-purpose flour

1 large egg, beaten

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 tablespoon honey

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Salmon: Start by cutting the salmon fillet into bite-sized cubes. Pat the pieces dry with paper towels and set aside.

Make the Dredging Station: In one bowl, combine the flour, garlic powder, paprika, salt, and pepper. In another bowl, place the beaten egg. In a third bowl, add the panko breadcrumbs.

Dredge the Salmon Bites: Dredge each salmon cube first in the flour mixture, shaking off the excess. Then dip it in the beaten egg, letting any extra drip off. Finally, coat the salmon cube in the panko breadcrumbs, ensuring it is fully covered. Repeat this process for all salmon cubes.

Preheat the Oil: In a large skillet, heat 1/4 inch of oil over medium-high heat. When the oil is hot (a breadcrumb sizzles upon contact), it’s ready for frying.

Fry the Salmon Bites: Carefully place the coated salmon cubes in the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until the bites are golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.

Prepare the Bang Bang Sauce: While the salmon bites are frying, combine mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a small bowl. Mix well until smooth and creamy.

Serve: Arrange the crispy salmon bites on a serving platter. Drizzle or dip them in the bang bang sauce, and garnish with fresh cilantro. Serve with lime wedges on the side for an extra zesty kick.
