Ingredients

2 cups cooked chicken, shredded

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup cream cheese, softened

1/4 cup fresh cilantro, chopped

1 small onion, finely chopped

1 green bell pepper, finely chopped

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil

Sour cream and salsa (for serving)

Instructions

Prepare the Filling: In a mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, cream cheese, cilantro, onion, bell pepper, garlic powder, cumin, chili powder, salt, and pepper. Mix until all ingredients are well incorporated.

Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Assemble the Quesadilla: Place one tortilla in the skillet, then spread a generous portion of the chicken and cheese mixture on one half of the tortilla. Fold the tortilla over to create a half-moon shape.

Cook the Quesadilla: Cook for about 3-4 minutes on one side until it turns golden brown and crispy. Carefully flip it over and cook for an additional 3-4 minutes on the other side. Remove from the skillet and let it rest.

Repeat: Repeat the process with the remaining tortillas and filling, adding the remaining olive oil to the skillet as needed.

Slice and Serve: Once all quesadillas are cooked, slice them into wedges and serve warm with sour cream and salsa on the side.
