Ingredients

500g beef (flank steak or sirloin), thinly sliced against the grain

1/2 cup cornstarch

1/2 cup all-purpose flour

Vegetable oil for frying

1 red bell pepper, sliced

1 green bell pepper, sliced

3-4 green onions, chopped

3-4 cloves garlic, minced

1 tablespoon ginger, minced

1/2 cup sweet chilli sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

Sesame seeds for garnish

Optional: Red pepper flakes for extra heat

Instructions

Prepare the Beef: In a bowl, combine the sliced beef with a pinch of salt and pepper. Marinate for about 15-20 minutes to enhance the flavor.

Coat the Beef: In a separate mixing bowl, mix cornstarch and all-purpose flour. Toss the marinated beef slices in the flour mixture until evenly coated. Shake off the excess flour.

Heat the Oil: In a large skillet or wok, heat vegetable oil over medium-high heat until it shimmers. You can test if the oil is hot enough by dropping a small piece of beef into it; it should sizzle immediately.

Fry the Beef: Working in batches, carefully add the coated beef to the hot oil. Fry until golden and crispy, about 2-3 minutes per batch. Remove the beef and drain on paper towels to absorb excess oil.

Stir-Fry Vegetables: In the same skillet, drain excess oil, leaving about 1 tablespoon. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant. Then, add sliced bell peppers and stir-fry for about 2 minutes until they are tender but still crisp.

Blend Everything: Return the crispy beef to the skillet with the vegetables. Add sweet chilli sauce, soy sauce, rice vinegar, and sesame oil. Toss everything together to ensure the beef and vegetables are evenly coated in the sauce.

Adjust Taste: If you prefer a little more heat, sprinkle in red pepper flakes. Taste and adjust seasoning if necessary.

Garnish and Serve: Transfer the crispy chilli beef to a serving platter. Top with chopped green onions and a sprinkle of sesame seeds for added crunch. Serve hot with steamed rice or noodles.
