1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1/4 cup cornstarch

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 cup vegetable oil (for frying)

For the Honey Garlic Sauce:

1/3 cup honey

2 tablespoons soy sauce

4 cloves garlic, minced

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon ginger, minced

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions
 

Prepare the Chicken: In a bowl, combine the flour, cornstarch, salt, black pepper, baking powder, and garlic powder. Toss the chicken pieces in the mixture until well coated.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Fry the Chicken: Carefully add the coated chicken pieces to the hot oil in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden and crispy. Remove the chicken and place it on a paper towel-lined plate to drain excess oil.

        Make the Sauce: In a separate small saucepan, combine the honey, soy sauce, minced garlic, rice vinegar, sesame oil, and ginger. Cook over medium heat, stirring occasionally, for about 2-3 minutes.

          Thicken the Sauce: Add the cornstarch slurry to the saucepan and stir well. Cook for another minute or until the sauce thickens.

            Combine Chicken and Sauce: Return the crispy fried chicken to the saucepan with the sauce. Toss to coat evenly and heat through for another 2 minutes.

              Serve: Transfer the glazed chicken to a serving platter and drizzle any remaining sauce over the top. Optionally, garnish with sesame seeds and chopped green onions.
