Crock Pot White Lasagna Soup

1 pound ground Italian sausage

1 medium onion, diced

4 cloves garlic, minced

4 cups chicken broth

1 can (15 oz) ricotta cheese

2 cups heavy cream

2 cups fresh spinach, chopped

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

9-12 lasagna noodles, uncooked and broken into pieces

Fresh basil, for garnish (optional)

Brown the Sausage: In a skillet over medium heat, cook the Italian sausage until browned, breaking it into pieces as it cooks. Drain excess fat if necessary.

    Sauté Vegetables: Add the diced onion and minced garlic to the skillet, cooking until the onion becomes translucent, about 3-4 minutes.

      Combine Ingredients in Crock Pot: Transfer the sausage and vegetable mixture to a 6-quart crock pot. Then add the chicken broth, ricotta cheese, heavy cream, chopped spinach, mozzarella cheese (reserve some for topping), Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until well combined.
