Crockpot Loaded Steak and Potato Bake

2lbs beef sirloin steak, cut into cubes

4 medium russet potatoes, diced

1 cup onion, chopped

3 cloves garlic, minced

1 cup beef broth

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup green onions, sliced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

4 strips of cooked bacon, crumbled

Instructions
 

Begin by seasoning the cubed beef sirloin with salt, pepper, smoked paprika, and oregano in a bowl. Ensure all pieces are evenly coated.

    In the bottom of the crockpot, layer half of the diced potatoes. Follow this by adding half of the seasoned steak cubes, half of the chopped onions, and half of the minced garlic.

      Repeat the layering with the remaining potatoes, steak, onions, and garlic.

        Pour the beef broth evenly over the layers in the crockpot, ensuring the potatoes and meat are covered.

          Cover the crockpot and cook on low for 8 hours or on high for 4 hours, or until the steak and potatoes are tender.

            Once cooked, gently stir in the sour cream, and check the seasoning, adjusting if needed.

              Sprinkle the shredded cheddar cheese on top, cover, and let it sit for about 10 minutes until the cheese melts.

                Serve hot, garnished with crumbled bacon and sliced green onions for a delicious finish.
