2 3/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional)

Colored sugar or sprinkles for decoration (optional)

Instructions
 

In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

    In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.

      Beat in the egg, followed by the vanilla extract and almond extract, mixing until well combined.

        Gradually add the dry mixture to the wet mixture, blending until the dough forms a cohesive ball. If the dough is too sticky, add a little extra flour.

          Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour (or overnight for improved flavor).

            Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.

              On a lightly floured surface, roll out one disk of dough to about 1/4 inch thick. Use cookie cutters to cut out desired shapes and transfer to the prepared baking sheets.

                Sprinkle with colored sugar or sprinkles if desired.

                  Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
