4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup cream cheese, softened

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup chicken broth (or white wine)

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Prepare the filling: In a bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, onion powder, oregano, salt, and pepper. Mix until well combined.

      Prepare the chicken: Using a sharp knife, slice a pocket into the side of each chicken breast, being careful not to cut all the way through.

        Stuff the chicken: Generously fill each chicken breast with the spinach and feta mixture. You can use toothpicks to secure the openings if needed.

          Sear the chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and sear them for about 3-4 minutes on each side until golden brown.

            Add broth and lemon juice: Carefully pour the chicken broth (or white wine) and lemon juice into the skillet around the chicken.

              Bake in the oven: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                Serve: Remove from the oven, garnish with fresh parsley, and serve warm with your favorite sides.
