Ingredients

1 cup rolled oats

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

1/4 cup brown sugar (packed)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/3 cup chocolate chips (optional)

1/4 cup chopped nuts or seeds (optional)

1/4 cup dried fruits (raisins, cranberries, or apricots - optional)

Instructions

Mix Ingredients: In a large microwave-safe bowl, combine the oats, peanut butter, honey (or maple syrup), brown sugar, vanilla extract, and salt. Stir until well mixed.

Microwave: Heat the mixture in the microwave for about 1 minute. Take it out and stir, then heat for another 30 seconds to 1 minute until everything is melted and combined.

Add Extras: If using, fold in the chocolate chips, chopped nuts, seeds, or dried fruits into the mixture while it's still warm.

Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, allowing some overhang for easy removal.

Spread Mixture: Pour the granola mixture into the prepared dish. Use a spatula or your hands (lightly greased) to press it down firmly and evenly.

Chill: Let the mixture cool at room temperature for about 30 minutes, then refrigerate for at least 1 hour to set.

Cut Bars: Once set, lift out of the pan using the parchment paper edges. Cut into bars or squares as desired.

Store: Store the bars in an airtight container at room temperature for up to a week, or in the fridge for longer freshness.

Prep Time: 5 minutes | Total Time: 1 hour 5 minutes | Servings: About 10 bars
