2 large cucumbers, thinly sliced

1/2 red onion, finely sliced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1 tablespoon sesame seeds, toasted

3 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Instructions
 

In a large bowl, combine the sliced cucumbers, red onion, cherry tomatoes, and chopped cilantro.

    In a separate bowl, whisk together the rice vinegar, soy sauce, honey (or maple syrup), sesame oil, minced garlic, and red pepper flakes if using. Mix until well combined.

      Pour the dressing over the cucumber mixture and toss gently to ensure all the vegetables are coated.
