Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons chipotle powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

1/2 cup ranch dressing

1 tablespoon fresh lime juice

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Avocado slices (optional)

Instructions

Marinate the Chicken: In a bowl, combine olive oil, chipotle powder, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Let them sit for at least 30 minutes to absorb the flavors (you can also marinate overnight for deeper flavor).

Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Once done, remove them from the grill and let them rest for 5 minutes before slicing.

Prepare the Burrito Filling: In a large mixing bowl, combine the cooked rice, black beans, corn, ranch dressing, and lime juice. Mix well until all ingredients are evenly incorporated.

Assemble the Burrito: Lay a flour tortilla flat on a clean surface. Place a portion of the rice and bean mixture in the center of the tortilla, then top with sliced grilled chicken and a sprinkle of shredded cheddar cheese. If desired, add fresh cilantro and avocado slices for extra flavor.

Wrap the Burrito: Fold in the sides of the tortilla and then roll it tightly from the bottom up to secure all the fillings. Repeat with the remaining tortillas and fillings.

Optional - Grill the Burritos: For an extra crispy finish, you can grill the assembled burritos on medium heat for about 2-3 minutes on each side until golden brown.

Serve: Slice the burritos in half and serve with additional ranch dressing or your favorite salsa on the side. Enjoy!
