2 cups cottage cheese (low-fat or full-fat)

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 avocado, diced

1/2 cup red onion, finely chopped

1/2 cup bell pepper (any color), diced

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Tortilla chips (optional, for crunch)

Instructions
 

In a large mixing bowl, combine the cottage cheese, cumin, chili powder, salt, and pepper. Stir well until the spices are evenly distributed.

    Add the cherry tomatoes, corn, black beans, red onion, and bell pepper to the cottage cheese mixture. Gently mix until all ingredients are well combined.

      Serve the cottage cheese mixture in individual bowls or a large serving bowl.

        Top with diced avocado and sprinkle with fresh cilantro.

          Squeeze fresh lime juice over the bowl for added flavor.
