Easy Cowboy Butter Chicken

4 boneless, skinless chicken thighs

1/2 cup unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon lemon juice

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

Optional: Fresh lemon wedges and additional parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a medium bowl, combine the softened butter, minced garlic, chopped parsley, lemon juice, Worcestershire sauce, smoked paprika, chili powder, dried oregano, salt, and black pepper. Mix well until all ingredients are fully blended.

      On a cutting board, place the chicken thighs and pat them dry with paper towels. Season both sides with a bit of salt and pepper.

        In a large oven-safe skillet, heat a little oil over medium-high heat. Add the chicken thighs and sear for about 3-4 minutes on each side, or until they are golden brown.

          Once the chicken is seared, reduce the heat to low and spread the cowboy butter mixture evenly over the chicken thighs.

            Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Remove from the oven and let rest for a few minutes before serving.

                Optional: Serve with fresh lemon wedges and sprinkle additional parsley over the top for garnish.
