Easy Cowboy Butter Chicken Linguine

8 oz linguine pasta

1 lb boneless, skinless chicken thighs, diced

1/4 cup unsalted butter

4 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper, to taste

1/2 cup chicken broth

1/2 cup heavy cream

1/2 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1/4 cup grated Parmesan cheese

Juice of 1 lime

Instructions
 

Cook the Linguine: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the linguine.

    Cook the Chicken: In a large skillet, over medium-high heat, melt 2 tablespoons of butter. Add the diced chicken thighs, seasoning with smoked paprika, cayenne pepper, salt, and pepper. Cook for about 7-8 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Cowboy Butter Sauce: In the same skillet, add the remaining butter and minced garlic. Sauté for about 30 seconds until fragrant. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for about 2-3 minutes.

        Combine Sauce and Chicken: Stir in the heavy cream, halved cherry tomatoes, and the cooked chicken. Allow it to simmer for another 3-4 minutes until the sauce thickens slightly.

          Combine with Pasta: Add the cooked linguine to the skillet and toss to combine, adding reserved pasta water as needed to reach the desired sauce consistency. Finish with lime juice, cilantro, and Parmesan cheese, mixing well to combine.
