Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

Ingredients
  

1 pound boneless, skinless chicken thighs

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

2 cloves garlic, minced

1 teaspoon ground coriander

1 teaspoon cumin

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for heat)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

For the Peanut Sauce:

½ cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey or maple syrup

1 clove garlic, minced

½ teaspoon red pepper flakes or sriracha (optional for heat)

Warm water (to thin the sauce)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, fish sauce, brown sugar, lime juice, garlic, ground coriander, cumin, black pepper, and red pepper flakes. Mix well. Add the chicken thighs, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

    Prepare the Peanut Sauce: In a medium bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, garlic, and red pepper flakes/sriracha if using. Gradually add warm water, one tablespoon at a time, until the sauce reaches your desired consistency. Adjust seasoning as needed. Set aside.

      Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated chicken thighs onto skewers, leaving a little space between each piece for even cooking.

        Grill the Chicken: Place the skewers on the preheated grill. Grill for about 6-8 minutes per side, or until the chicken is cooked through and has nice grill marks, reaching an internal temperature of 165°F (75°C).

          Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve hot with the peanut sauce drizzled over the top or on the side for dipping. Enjoy!
