Ingredients

1 lb boneless, skinless chicken thighs (cut into 1-inch pieces)

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

2 cloves garlic (minced)

1 teaspoon ginger (grated)

1 tablespoon lime juice

1 tablespoon sesame oil

½ teaspoon red pepper flakes (adjust to taste)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Peanut Sauce:

½ cup creamy peanut butter

¼ cup coconut milk

2 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon honey or maple syrup

1 clove garlic (minced)

1 tablespoon sriracha (optional, for heat)

Chopped peanuts and cilantro (for garnish)

Instructions

Marinate the Chicken: In a large bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, lime juice, sesame oil, and red pepper flakes. Whisk until the sugar dissolves. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for more flavor.

Prepare the Peanut Sauce: In a medium bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, honey, minced garlic, and sriracha until smooth. Adjust thickness by adding a bit of water if necessary. Set aside.

Skewer the Chicken: Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Grill the Chicken: Place the skewers on the hot grill and cook for about 10-12 minutes, turning frequently until the chicken is cooked through (internal temperature should reach 165°F or 74°C).

Serve: Remove the skewers from the grill. Drizzle with peanut sauce and garnish with chopped peanuts and fresh cilantro. Serve with additional peanut sauce for dipping.
