Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

For the Chicken Skewers:

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice (freshly squeezed)

2 cloves garlic, minced

1 teaspoon ground ginger

½ teaspoon red pepper flakes (adjust for spice preference)

Wooden or bamboo skewers (soaked in water for 30 minutes)

For the Peanut Sauce:

½ cup creamy peanut butter

2 tablespoons soy sauce

2 tablespoons lime juice (freshly squeezed)

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 clove garlic, minced

1-2 tablespoons warm water (to thin the sauce as needed)

Chopped peanuts and cilantro for garnish

Instructions
 

Marinate the Chicken:

    In a bowl, combine the soy sauce, fish sauce, brown sugar, lime juice, minced garlic, ground ginger, and red pepper flakes. Add the chicken cubes, and stir until they are well coated. Cover and refrigerate for 30 minutes to 2 hours for more flavor.

      Prepare the Peanut Sauce:

        In another bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, and minced garlic. Add warm water gradually until you reach your desired consistency. Taste and adjust seasoning if necessary. Set aside.

          Preheat the Grill:

            Preheat your grill to medium-high heat. If using a grill pan on the stovetop, preheat it and lightly oil the surface.

              Skewer the Chicken:

                Take the marinated chicken pieces and thread them onto the soaked skewers, leaving a little space between each piece for even cooking.

                  Grill the Skewers:

                    Place the chicken skewers on the grill. Grill for about 5-6 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

                      Serve:

                        Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Serve with the peanut sauce on the side for dipping and garnish with chopped peanuts and cilantro.
