Easy Healthy Broccoli Pasta

Ingredients
  

8 oz whole grain pasta

2 cups broccoli florets

1 tablespoon olive oil

3 cloves garlic, minced

½ teaspoon red pepper flakes (optional)

1 lemon, zested and juiced

¼ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Instructions
 

Cook the pasta: Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets to the pot. Drain both the pasta and broccoli, reserving about ½ cup of the pasta water.

    Sauté the garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes, until fragrant and golden brown, being careful not to burn the garlic.

      Combine everything: Add the drained pasta and broccoli back into the pot with the garlic. Pour in the reserved pasta water, lemon zest, and lemon juice. Stir well to combine.

        Add cheese and season: Sprinkle the grated Parmesan (or nutritional yeast) over the pasta and broccoli. Toss everything together until coated. Season with salt and pepper to taste.

          Serve: Plate the pasta and garnish with fresh basil or parsley. Drizzle a little extra olive oil on top if desired.
