4 boneless, skinless chicken thighs

1 lb baby potatoes, halved

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

3 tablespoons olive oil

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken and Potatoes: In a large mixing bowl, combine the chicken thighs and halved baby potatoes.

      Season the Mixture: Add the minced garlic, dried oregano, dried basil, salt, pepper, and red pepper flakes (if using). Drizzle in the olive oil and balsamic vinegar. Toss everything together until the chicken and potatoes are well coated in the seasoning.

        Arrange in Baking Dish: Spread the seasoned chicken and potatoes in a single layer on a large baking sheet or in a roasting pan. Make sure the chicken thighs are skin-side up.
