20 jumbo pasta shells

2 cups fresh spinach, chopped (or 1 cup frozen, thawed and squeezed dry)

1 cup ricotta cheese

1 cup cottage cheese, drained

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 jar (24 oz) marinara sauce

Fresh basil leaves for garnish (optional)

Olive oil for drizzling

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling:

        In a large mixing bowl, combine chopped spinach, ricotta cheese, cottage cheese, 1/2 cup of the mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.

          Stuff the Shells:

            Preheat your oven to 375°F (190°C). Take each pasta shell and carefully stuff it with a generous amount of the spinach and ricotta filling.

              Assemble the Dish:

                Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Place the stuffed shells seam-side up in the dish. Pour the remaining marinara sauce over the shells, ensuring they are well covered. Sprinkle the remaining mozzarella cheese evenly on top.

                  Bake:

                    Cover the dish with foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                      Garnish and Serve:

                        Allow the dish to cool for a few minutes. Drizzle with olive oil and garnish with fresh basil leaves if desired. Serve warm and enjoy your deliciously healthy veggie dinner!
