Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

Ingredients
  

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 egg, lightly beaten

2 cloves garlic, minced

1 jar (24 oz) marinara sauce

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil and add the jumbo shells. Cook according to package instructions until al dente. Drain and let cool slightly.

      Sauté the Spinach: In a skillet over medium heat, add a splash of olive oil and sauté the minced garlic for about 1 minute. Add the chopped spinach and sauté until it's wilted. Remove from heat and let cool.

        Mix the Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, beaten egg, sautéed spinach, oregano, salt, and black pepper. Mix until well combined.

          Stuff the Shells: Carefully stuff each cooked jumbo shell with the spinach and ricotta mixture.

            Prepare the Baking Dish: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

              Arrange the Shells: Place the stuffed shells in the baking dish, open side up. Pour the remaining marinara sauce over the shells and sprinkle the rest of the mozzarella cheese on top.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until bubbly and golden on top.

                  Serve: Once done, let cool for a few minutes. Garnish with fresh basil leaves if desired and serve hot.
