Ingredients

8 ounces penne pasta

1 pound boneless, skinless chicken breasts, sliced into strips

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken and season with salt and pepper. Cook for about 5-7 minutes or until golden brown and cooked through. Remove chicken from the skillet and set aside.

Make the Sauce: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Add the cherry tomatoes and cook for an additional 2-3 minutes until they soften.

Add Spinach and Cream: Stir in the fresh spinach and cook until wilted. Then, pour in the heavy cream, blending it with the sautéed vegetables.

Combine Ingredients: Add the cooked chicken back to the skillet along with the Italian seasoning and Parmesan cheese. Stir to combine and let everything simmer for 3-4 minutes until the sauce thickens slightly.

Toss with Pasta: Add the cooked penne pasta to the skillet, tossing everything together until the pasta is well-coated with the sauce. Adjust seasoning with salt and pepper to taste.

Serve: Plate the pasta and garnish with fresh basil leaves and additional Parmesan cheese if desired. Enjoy your Easy Tuscan Chicken Pasta!
