English Muffin Breakfast Pizza

2 English muffins, split in half

4 large eggs

1/2 cup shredded mozzarella cheese

1/4 cup cherry tomatoes, halved

1/2 cup cooked and crumbled breakfast sausage or crispy bacon

1/4 cup fresh spinach, chopped

1/4 teaspoon garlic powder

Salt and pepper to taste

Olive oil or cooking spray (for greasing)

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil or cooking spray.

    Place the split English muffin halves on the prepared baking sheet, cut side up.

      In a medium bowl, crack the eggs and whisk them until well blended. Season with garlic powder, salt, and pepper.

        In a skillet over medium heat, scramble the eggs until just slightly set, then remove from heat (they will finish cooking in the oven).

          Evenly distribute the scrambled eggs onto each English muffin half.

            Top each with a sprinkle of shredded mozzarella cheese, followed by the cherry tomatoes, cooked breakfast sausage or bacon, and fresh spinach.

              Return the baking sheet to the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

                Once cooked, remove from the oven and let cool for a minute. If desired, garnish with fresh basil or parsley before serving.

                  Serve warm and enjoy your delightful breakfast pizza!
