1 large romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup radishes, thinly sliced

½ cup red onion, finely chopped

1 cup garbanzo beans, rinsed and drained

½ cup Kalamata olives, pitted and sliced

1 cup cooked bacon, crumbled (optional)

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

1 teaspoon dried oregano

Salt and pepper to taste

For the Dressing:

⅓ cup olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 tablespoon honey

1 clove garlic, minced

Salt and pepper to taste

Instructions
 

In a large bowl, combine chopped romaine, cherry tomatoes, cucumber, radishes, red onion, garbanzo beans, Kalamata olives, bacon (if using), feta cheese, and parsley.

    In a separate small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, and a pinch of salt and pepper until smooth and emulsified.
