Ingredients

2 boneless, skinless chicken thighs

2 tablespoons gochujang (Korean chili paste)

1 tablespoon soy sauce

1 tablespoon sesame oil

4 cups chicken broth

2 packs of fresh ramen noodles

1 tablespoon vegetable oil

4 cloves garlic, minced

1/2 cup heavy cream

1 tablespoon rice vinegar

2 green onions, sliced

1 cup baby spinach

1 tablespoon sesame seeds

Salt and pepper to taste

Optional: sliced red chili, for garnish

Instructions

In a bowl, combine the gochujang, soy sauce, and sesame oil. Add the chicken thighs, ensuring they are well-coated in the marinade. Let it marinate for at least 30 minutes.

Heat vegetable oil in a large pot over medium heat. Remove chicken from marinade and sauté in the pot for about 5-6 minutes on each side, until browned and cooked through. Remove the chicken and set aside.

In the same pot, add minced garlic and sauté until fragrant, about 1-2 minutes. Pour in the chicken broth and bring to a simmer.

While the broth is heating, cook the ramen noodles according to package instructions. Drain and set aside.

Once the broth is simmering, stir in the heavy cream and rice vinegar. Check the seasoning and add salt and pepper if needed.

Shred the cooked chicken into bite-sized pieces and return to the pot. Add baby spinach and let it wilt in the broth.

To assemble, divide the ramen noodles between bowls. Ladle the hot broth and chicken mixture over the noodles.

Garnish with sliced green onions, sesame seeds, and optional sliced red chili for an extra kick.

Serve with chopsticks and enjoy your Fiery Chicken Ramen with Creamy Garlic Sauce!
