1 cup water

1/2 cup unsalted butter

1/4 teaspoon salt

1 cup all-purpose flour

4 large eggs

1 teaspoon vanilla extract (or orange zest for extra flavor)

Oil for frying (vegetable or canola)

Powdered sugar for dusting

Instructions
 

In a medium saucepan, combine the water, butter, and salt. Bring to a boil over medium heat.

    Once boiling, remove from heat and stir in the flour until completely mixed and it forms a ball of dough.

      Let the dough cool for about 5 minutes. Then, add the eggs one at a time, mixing well after each addition until smooth and glossy. Stir in the vanilla extract or orange zest.

        Transfer the dough to a piping bag fitted with a star tip.

          Heat oil in a deep fryer or large pot to 350°F (175°C).

            Pipe 4-inch long strips of dough into the hot oil, being careful not to overcrowd the pot. Fry until golden brown on both sides, about 3-4 minutes.

              Remove the crullers with a slotted spoon and drain on paper towels.

                While still warm, dust with powdered sugar for a sweet finish.
