Ingredients
  

2 cups frozen corn (thawed)

1 cup cherry tomatoes, halved

1 cup diced bell peppers (any color)

1/2 cup red onion, finely chopped

1 can (15 oz) black beans, rinsed and drained

1 cup shredded cheddar cheese

1 cup Fritos corn chips, lightly crushed

1/2 cup cilantro, chopped (optional)

1/2 cup mayonnaise

1/2 cup sour cream

2 tablespoons lime juice

1 tablespoon taco seasoning

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the thawed corn, cherry tomatoes, bell peppers, red onion, black beans, and cheddar cheese. Mix well to combine all the fresh ingredients.

    In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, taco seasoning, and a pinch of salt and pepper. Adjust the flavors to your liking.

      Pour the dressing over the veggie mixture and gently toss until everything is evenly coated.

        Just before serving, fold in the crushed Fritos corn chips and chopped cilantro for added crunch and flavor.

          Serve immediately for the best texture, or refrigerate for up to 2 hours to let the flavors meld.
