Ingredients

4 slices of thick-cut sourdough bread

4 tablespoons unsalted butter, softened

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

Salt and pepper to taste

Optional: Fresh parsley or basil for garnish

Instructions

Prepare the Garlic Butter: In a small bowl, combine the softened butter, minced garlic, Italian herbs, and a pinch of salt and pepper. Mix until well integrated.

Butter the Bread: Spread a generous amount of the garlic butter mixture on one side of each slice of sourdough bread.

Assemble the Sandwich: Place two slices of the bread butter-side down in a non-stick skillet or griddle. Top each slice with equal parts of the shredded mozzarella and cheddar cheese. Place the remaining slices of bread on top, butter-side up, to form two sandwiches.

Cook the Sandwiches: Heat the skillet over medium heat. Cook the sandwiches for about 3-4 minutes on one side, or until golden brown and the cheese starts to melt. Carefully flip the sandwiches and cook for another 3-4 minutes on the other side. If the bread starts to brown too quickly, reduce the heat to low and cook longer to ensure the cheese melts.

Check for Doneness: Once both sides are toasty and golden brown and the cheese is gooey and melted, remove the sandwiches from the skillet.

Serve: Allow the sandwiches to cool for a minute before slicing them in half. Optionally, sprinkle with fresh parsley or basil for garnishing. Enjoy your delicious garlic bread grilled cheese!
