2 sirloin steaks (about 1 inch thick)

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

Optional: Fresh parsley for garnish

Prep the Potatoes: In a medium pot, add the halved baby potatoes and cover them with water. Bring to a boil, then reduce heat and let simmer for about 10 minutes, or until they are fork-tender. Drain and set aside.

    Sear the Steaks: While the potatoes are cooking, pat the steaks dry with paper towels and season both sides generously with salt and pepper. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the steaks to the pan and sear for about 3-4 minutes on each side for medium-rare, or until the internal temperature reaches 130°F (54°C). Remove the steaks from the skillet and let them rest on a plate.

      Cook the Potatoes: In the same skillet, add another tablespoon of olive oil if needed, then toss in the cooked potatoes. Cook for about 5-7 minutes, stirring occasionally, until they are golden brown and crispy on the outside.
