Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper, to taste

1 tablespoon olive oil

¼ teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Begin by washing the baby potatoes. Cut them in half and place them in a pot. Cover them with water, add a pinch of salt, and bring to a boil. Cook for about 10-12 minutes until they are fork-tender. Drain and set aside.

    Sear the Steak Bites: In a large skillet or frying pan, heat olive oil over medium-high heat. Season the steak cubes with salt and pepper. Once the oil is hot, add the steak bites in a single layer. Sear for about 2-3 minutes on each side until browned but still medium-rare. Remove the steak from the pan and set aside.

      Cook the Potatoes: In the same skillet, add the parboiled potatoes, cut side down. Sear them for 3-4 minutes until they get golden brown and crispy. Stir occasionally to ensure even browning.

        Make the Garlic Butter: Lower the heat to medium. To the skillet, add 4 tablespoons of butter, minced garlic, rosemary, thyme, and red pepper flakes (if using). Stir well and let the garlic cook for about 1-2 minutes until fragrant but not burnt.

          Combine: Return the steak bites to the skillet, toss everything together in the garlic butter sauce for an additional 1-2 minutes. Make sure to coat the steak and potatoes evenly.
