1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes until fork-tender. Drain and set aside.

    Heat the skillet: In a large skillet, add 2 tablespoons of olive oil over medium-high heat. Once hot, add the cooked potatoes cut side down. Cook them for about 5-7 minutes until they are golden brown and crispy. Shake the pan occasionally for even browning.

      Season the potatoes: Once nicely browned, sprinkle half of the salt, pepper, rosemary, and thyme over the potatoes. Toss to coat and cook for an additional 2 minutes. Remove the potatoes from the skillet and keep them warm.
