Garlic Butter Steak Bites and Potatoes

For the Steak Bites:

1 lb sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper to taste

For the Potatoes:

1 lb baby potatoes, halved

3 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large bowl, toss the halved baby potatoes with olive oil, paprika, garlic powder, salt, and pepper until well coated.

        - Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until golden and crispy, flipping them halfway through cooking.

          Cook the Steak Bites:

            - While the potatoes are roasting, heat a large skillet over medium-high heat.

              - Add 2 tablespoons of butter. Once melted and sizzling, add the cubed steak bites in a single layer, seasoning with salt and pepper.

                - Sear for about 2-3 minutes on each side or until browned but still tender. Do not overcrowd the pan; cook in batches if necessary.

                  - Remove the steak bites from the skillet and set aside.

                    Make the Garlic Butter Sauce:

                      - In the same skillet, lower the heat to medium, add the remaining 2 tablespoons of butter, and add the minced garlic along with rosemary and thyme.

                        - Sauté for about 1 minute, just until the garlic is fragrant (be careful not to burn it).

                          - Return the cooked steak bites to the skillet, tossing them in the garlic butter for another minute to absorb the flavors.

                            Serve:

                              - Once the potatoes are done, remove them from the oven and place them on a serving plate along with the garlic butter steak bites.

                                - Garnish with fresh parsley and serve immediately.
