Ingredients

8 oz (225g) cremini or button mushrooms, sliced

4 cloves garlic, minced

2 tbsp olive oil

1 tbsp unsalted butter

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

Salt and pepper, to taste

1 tbsp balsamic vinegar

4 slices of rustic bread (like sourdough or ciabatta)

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish

Instructions

Prepare the mushrooms: In a skillet, heat the olive oil and butter over medium heat. Once the butter has melted, add the sliced mushrooms. Sauté for about 5-7 minutes, stirring occasionally, until they are golden brown and have released their moisture.

Add garlic and seasoning: Stir in the minced garlic and thyme, cooking for an additional 2-3 minutes until the garlic is fragrant but not burnt. Season with salt and pepper to taste. Add the balsamic vinegar and toss to combine well. Remove the skillet from heat.

Toast the bread: While the mushrooms are cooking, heat a separate skillet or grill pan over medium-high heat. Toast the slices of rustic bread until golden brown on both sides, approximately 3-4 minutes per side.

Assemble the toast: Place the toasted bread on serving plates. Spoon the garlicky mushroom mixture generously over each slice. If using, sprinkle the grated Parmesan cheese on top.

Garnish and serve: Finish with a sprinkle of fresh parsley on each toast for a burst of color and freshness. Serve immediately, while warm.
