2 ripe avocados

4 slices of whole grain bread

2 large eggs

1 tablespoon lemon juice

Salt and pepper to taste

1 teaspoon red pepper flakes

Fresh cilantro or parsley for garnish

Optional: feta cheese or cherry tomatoes for topping

Instructions
 

Begin by toasting the whole grain bread slices until golden brown and crispy.

    While the bread is toasting, prepare the poached eggs. Fill a saucepan with water and bring it to a gentle simmer. Add a splash of vinegar to help keep the eggs together.

      Crack each egg into a small bowl and gently slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set and the yolks are still runny. Use a slotted spoon to remove the eggs and place them on a paper towel to drain excess water.

        In a bowl, mash the ripe avocados with lemon juice, salt, and pepper until creamy but still slightly chunky.

          Spread a generous amount of the mashed avocado mixture over each slice of toasted bread.
