500g chicken breast, diced

200g plain yogurt

2 tablespoons lemon juice

2 teaspoons ground cumin

2 teaspoons ground coriander

2 teaspoons garam masala

2 teaspoons turmeric

1 teaspoon chili powder

4 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons vegetable oil

1 large onion, finely chopped

400g canned tomatoes, crushed

1 cup heavy cream

Salt and pepper to taste

Fresh cilantro, for garnish

Cooked basmati rice, for serving

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the diced chicken, yogurt, lemon juice, cumin, coriander, garam masala, turmeric, chili powder, half of the minced garlic, and half of the grated ginger. Mix well and let it marinate for at least 1 hour, preferably overnight in the refrigerator for maximum flavor.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the marinated chicken (discard excess marinade) and cook for about 6-8 minutes until the chicken is golden brown and cooked through. Remove the chicken from the pan and set it aside.

      Prepare the Sauce: In the same pan, add the remaining tablespoon of oil. Add the chopped onion and sauté for 5 minutes until soft and translucent. Add the remaining garlic and ginger to the pan and cook for an additional 1-2 minutes until fragrant.

        Add Tomatoes: Stir in the crushed tomatoes and season with salt and pepper. Cook the mixture for about 10 minutes over medium heat, allowing the flavors to meld together.

          Incorporate the Cream: Lower the heat and stir in the heavy cream, mixing until well combined. Bring the sauce to a gentle simmer.

            Combine Chicken and Sauce: Add the cooked chicken back into the pan, stirring to coat it evenly with the sauce. Let it simmer for another 5 minutes to heat through and blend the flavors.

              Garnish and Serve: Remove from heat and garnish with freshly chopped cilantro. Serve hot over basmati rice, and enjoy your delicious Chicken Tikka Masala.
