Ingredients

4 ripe peaches, halved and pitted

2 tablespoons olive oil

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon cinnamon

¼ teaspoon salt

1 pint vanilla ice cream

Fresh mint leaves, for garnish (optional)

Instructions

Preheat the grill to medium-high heat.

In a small bowl, whisk together the olive oil, honey, cinnamon, and salt.

Brush the cut sides of the peach halves with the olive oil mixture.

Place the peaches cut side down on the grill. Grill for about 4-5 minutes until charred and soft, then flip them over and grill for another 2-3 minutes.

Remove the peaches from the grill and let them cool slightly.

Serve the grilled peaches warm with a generous scoop of vanilla ice cream on top.
