Ingredients

1 lb ground turkey

2 tablespoons vegetable oil

2 cups broccoli florets

1 red bell pepper, sliced

1 cup snap peas

3 green onions, chopped

3 garlic cloves, minced

1 tablespoon fresh ginger, minced

½ cup teriyaki sauce

2 tablespoons soy sauce (low sodium)

1 tablespoon sesame oil

Cooked rice or quinoa for serving

Sesame seeds for garnish

Instructions

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add the minced garlic and ginger to the pan; sauté for 30 seconds until fragrant.

Add the ground turkey to the skillet, breaking it up with a spatula, and cook until browned, about 5-7 minutes.

Incorporate the broccoli, bell pepper, and snap peas into the skillet. Stir-fry the vegetables for about 4-5 minutes until tender-crisp.

Pour in the teriyaki sauce and soy sauce, stirring well to combine. Allow the mixture to simmer for an additional 2 minutes so the flavors meld.

Drizzle with sesame oil and toss in the chopped green onions. Stir to combine and heat through for another minute.

Serve the stir fry over a bed of cooked rice or quinoa, and garnish with sesame seeds as desired.
