Ingredients
  

2 medium zucchinis, spiralized

2 cups cherry tomatoes, halved

2 cloves garlic, minced

1 tablespoon extra virgin olive oil

1 teaspoon balsamic vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese (optional)

Instructions
 

Prepare Zucchini: Use a spiralizer to convert the zucchinis into noodle-like strands. Alternatively, you can use a vegetable peeler to create ribbons. Set aside.

    Sauté Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Cook Cherry Tomatoes: Add the halved cherry tomatoes to the skillet. Cook them for about 5 minutes, occasionally stirring, until they soften and start to burst.

        Combine Ingredients: Stir in the zucchini noodles, balsamic vinegar, dried oregano, salt, and pepper. Toss everything together and cook for an additional 2-3 minutes, allowing the zucchini to soften slightly.

          Serve: Remove from heat. Serve warm in bowls, garnished with fresh basil leaves and a sprinkle of Parmesan cheese if desired.
