Hearty Veggie Rolls with Peanut Sauce

For the Veggie Rolls:

8 rice paper wrappers

1 cup shredded carrots

1 cup cucumber, julienned

1 cup bell peppers (red and yellow), sliced thinly

1 cup red cabbage, shredded

1 cup fresh herbs (mint, cilantro, and basil)

1 avocado, sliced

½ cup cooked vermicelli noodles (optional)

Lettuce leaves for wrapping

For the Peanut Sauce:

½ cup peanut butter

3 tablespoons soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1-2 teaspoons sriracha (adjust to taste)

½ cup warm water (to thin the sauce as needed)

Chopped peanuts and lime wedges for garnish

Prepare the Veggies: Wash and slice all fresh vegetables and herbs. Keep them organized for easy access while making the rolls.

    Make the Peanut Sauce: In a mixing bowl, combine peanut butter, soy sauce, honey (or maple syrup), rice vinegar, and sriracha. Slowly whisk in warm water until you reach your desired consistency. Set aside.

      Soften the Rice Paper: Fill a wide shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable. Remove it and lay it on a clean surface.

        Assemble the Rolls: On the lower third of the rice paper, place a small lettuce leaf, followed by a few pieces each of shredded carrots, cucumber, bell peppers, red cabbage, and herbs. You can also add some vermicelli noodles and avocado slices if desired.

          Roll It Up: Fold the sides of the rice paper wrapper over the filling, then roll it tightly from the bottom up. Repeat this process with the remaining wrappers and fillings.
