Ingredients
  

2 cups whole wheat pasta (fusilli or penne)

1 lb grilled chicken breast, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (red and yellow), diced

1/2 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional for extra flavor)

1/4 cup olive oil

2 tbsp balsamic vinegar

1 tbsp Dijon mustard

1 tsp garlic powder

Salt and pepper to taste

1/2 cup chickpeas, rinsed and drained (optional, for added protein)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, garlic powder, salt, and pepper until well combined. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the cooked pasta, diced grilled chicken, cherry tomatoes, cucumber, bell peppers, red onion, and chickpeas (if using).
