Ingredients

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup crushed BBQ-flavored potato chips

1 cup breadcrumbs (panko works great for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 large egg

2 tablespoons milk

Cooking spray or oil for baking/frying

Instructions

Prep the Chicken: Season the chicken pieces with salt, pepper, garlic powder, and onion powder. Set aside.

Prepare Coating: In a large bowl, mix the crushed BBQ chips and breadcrumbs with smoked paprika. This will be your crunchy coating.

Egg Wash: In another bowl, whisk together the egg and milk.

Coat the Chicken: Dip each piece of chicken first into the egg wash, letting any excess drip off, then coat generously in the BBQ chip and breadcrumb mixture. Ensure each piece is fully covered.

Arrange Nuggets: Place the coated chicken nuggets on a baking sheet lined with parchment paper or lightly greased with cooking spray.

Bake/Fry: For baking, preheat your oven to 400°F (200°C) and bake for about 15-20 minutes, flipping halfway until golden brown and cooked through. For frying, heat oil in a skillet over medium heat and cook the nuggets for about 3-4 minutes on each side until golden and crispy.

Serve: Allow the nuggets to cool slightly, then serve with your favorite dipping sauces such as ranch, honey mustard, or extra BBQ sauce.
