Ingredients

1 cup cocoa butter

1/2 cup cocoa powder (unsweetened)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional: 1/4 cup finely chopped nuts (such as almonds or hazelnuts) or dried fruits (like cranberries or apricots)

Instructions

Melt the Cocoa Butter: Begin by chopping the cocoa butter into small pieces for easier melting. Place it in a double boiler set over simmering water. Stir occasionally until it’s completely melted and smooth.

Mix Ingredients: Once the cocoa butter is melted, remove it from the heat. Sift the cocoa powder into the melted butter, whisking constantly to ensure there are no lumps.

Add Sweetness: Add the honey or maple syrup, vanilla extract, and sea salt to the mixture. Whisk thoroughly until all ingredients are well combined and the mixture is glossy.

Incorporate Add-ins: If you’re adding nuts or dried fruits, fold them into the chocolate mixture at this stage. This gives your bars an extra crunch and delightful texture.

Mold the Chocolate: Pour the warm mixture into chocolate molds or a lined baking dish, ensuring it’s evenly distributed. Tap the molds on the counter to release any air bubbles.

Chill: Place the molds in the refrigerator for about 1-2 hours, or until the chocolate is fully hardened.

Unmold and Store: Once the chocolate is set, carefully remove it from the molds. Store your homemade dark chocolate in an airtight container in the fridge or a cool place to maintain its texture.
