Honey Lime Chicken & Avocado Rice Stack

2 chicken breasts

2 tablespoons honey

2 tablespoons fresh lime juice

1 teaspoon lime zest

1 teaspoon garlic powder

Salt and pepper to taste

1 cup uncooked jasmine rice

2 ripe avocados, diced

1 medium tomato, diced

¼ cup fresh cilantro, chopped

1 tablespoon olive oil

Juice of 1 lime

1 teaspoon cumin

Optional: Sliced jalapeños for garnish

Marinate the Chicken: In a bowl, mix honey, lime juice, lime zest, garlic powder, salt, and pepper. Add the chicken breasts and coat well. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for about 15-18 minutes until the water is absorbed and the rice is fluffy. Remove from heat and let it sit for 5 minutes, then fluff with a fork.

      Prepare the Avocado Mixture: In a bowl, combine the diced avocados, tomatoes, cilantro, olive oil, lime juice, and cumin. Gently mix to combine and season with salt and pepper to taste. Set aside.

        Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (74°C). Let the chicken rest for a few minutes before slicing.
