Ingredients

1 lb salmon fillet, skin removed

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

2 tablespoons hot honey (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh parsley (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the salmon: Cut the salmon fillet into bite-sized cubes, around 1-inch pieces.

Season the salmon: In a mixing bowl, toss the salmon bites with olive oil, salt, pepper, smoked paprika, and garlic powder until evenly coated.

Bake the salmon: Spread the seasoned salmon bites on the prepared baking sheet in a single layer. Bake in the preheated oven for 10-12 minutes or until the salmon is cooked through and flakes easily with a fork.

Make the hot honey glaze: While the salmon is baking, combine hot honey, soy sauce, and lemon juice in a small saucepan over low heat. Stir occasionally until warmed through and slightly thickened, about 2-3 minutes. Remove from heat.

Glaze the salmon: Once the salmon bites are ready, drizzle the hot honey glaze over the warm salmon bites and toss gently to coat.

Serve: Transfer the glazed salmon bites to a serving platter, sprinkle with fresh parsley, and serve with lemon wedges on the side for an extra burst of flavor.
