2 cups apple cider

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 teaspoon baking soda

2 teaspoons baking powder

½ teaspoon salt

2 cups all-purpose flour

¾ cup granulated sugar

½ cup packed brown sugar

2 large eggs

½ cup unsweetened applesauce

⅓ cup vegetable oil

1 teaspoon vanilla extract

½ cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Instructions
 

Reduce the Apple Cider: In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce heat and let it simmer until it’s reduced to about 1 cup, approximately 15-20 minutes. Remove from heat and let cool.

    Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with non-stick cooking spray.

      Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt until combined.

        Mix Wet Ingredients: In another bowl, beat together the eggs, cooled reduced apple cider, applesauce, vegetable oil, and vanilla extract until smooth.

          Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

            Fill the Donut Pan: Using a piping bag or a zip-top bag with the corner snipped off, fill each cavity of the donut pan about ¾ full with the batter.

              Bake: Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted in the center of a donut comes out clean.

                Cool and Coat: Let the donuts cool in the pan for about 5 minutes, then transfer them to a wire rack. In a small bowl, combine sugar and cinnamon for the coating. While the donuts are still warm, roll them in the cinnamon-sugar mixture until well coated.
