2 cups rolled oats

2 cups unsweetened almond milk (or any milk of choice)

2 medium apples, peeled and diced

1/2 cup unsweetened applesauce

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Fresh apple slices and a sprinkle of cinnamon for topping

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish or line it with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the almond milk, applesauce, maple syrup, and vanilla extract. Mix well.

      Add Dry Ingredients: To the wet mixture, add the rolled oats, ground cinnamon, nutmeg, baking powder, and salt. Stir until all ingredients are thoroughly combined.

        Incorporate Apples and Nuts: Gently fold in the diced apples, and if using, add the chopped nuts and dried fruits. Ensure everything is well distributed throughout the mixture.

          Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, smoothing the top with a spatula. Arrange the fresh apple slices on top and sprinkle some extra cinnamon for added flavor.
