2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

2 large eggs

1/2 cup unsalted butter, melted and slightly cooled

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 teaspoon vanilla extract

2 cups finely chopped apples (about 2 medium apples)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup brown sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.

    In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

      In a separate bowl, beat the eggs lightly, then add in the melted butter, buttermilk, and vanilla extract. Mix until smooth.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing; a few lumps are okay.

          Fold in the chopped apples and nuts (if using) until evenly distributed in the batter.

            In a small bowl, combine the brown sugar and ground cinnamon for the topping.

              Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the brown sugar and cinnamon mixture generously on top of each muffin.

                Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                  Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
