1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice)

2 cups apples, peeled, cored, and diced (about 2 medium apples)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

      Blend Wet Ingredients: In another bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until well combined. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        Combine Wet and Dry Mixes: Gradually add the dry mixture to the wet ingredients, alternating with the buttermilk. Mix until just combined. Be careful not to overmix, as this can make the muffins tough.

          Add Apples and Nuts: Gently fold in the diced apples and, if using, the chopped walnuts or pecans until evenly distributed in the batter.

            Prepare the Topping: In a small bowl, combine the granulated sugar and cinnamon for the topping. Sprinkle this mixture evenly over the muffin batter in each cup.

              Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
