Ingredients
  

1 lb ground beef or pork

1 medium onion, diced

4 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

6 fresh jalapeños, sliced (remove seeds for less heat)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper to taste

2 eggs, beaten

1/4 cup sour cream

Fresh cilantro or green onions for garnish

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish with cooking spray or butter.

    In a large skillet over medium heat, cook the ground beef (or pork) until it’s browned. Drain excess fat.

      Add the diced onion, garlic powder, onion powder, smoked paprika, salt, and pepper to the skillet. Cook until the onion is translucent, about 3-4 minutes.

        Reduce the heat to low, add the cream cheese to the skillet, and stir until melted and well combined with the meat mixture.

          Remove from heat and stir in half of the shredded cheddar cheese, and the sliced jalapeños. Mix well.

            In a separate bowl, whisk together the beaten eggs and sour cream until smooth. Pour the egg mixture into the skillet and stir to combine everything.

              Transfer the mixture to the greased casserole dish. Sprinkle the remaining cheddar and mozzarella cheese on top.

                Bake the casserole for about 25-30 minutes, or until the cheese is bubbly and golden.

                  Remove from the oven and let it cool for a few minutes before garnishing with fresh cilantro or green onions.
